I've partnered with @idahoanfoods to create my own Mash-A-Bowl recipe using Idahoan’s Four Cheese Mashed Potato Cups! 

Last week, I visited Idahoan’s #MashedInAmericaTour – the world’s 1st immersive mashed potato experience – at the Big 12 Championship and had so much fun! 

I was inspired by Kansas City Barbecue to create my BBQ Pork Meatball Mash-A-Bowl, topping Idahoan’s Four Cheese Mashed Potato Cup (made from 100% real Idaho potatoes!) with delicious barbecue pork meatballs, French fried onions and chives!

Michelle’s BBQ Pork Meatball Mash-A-Bowl

Serves 2


2 Idahoan Four Cheese Mashed Potato Cups
1/2 pound ground pork
1/4 cup Italian breadcrumbs
1/8 cup grated parmesan cheese
1 teaspoon Dijon mustard
1 teaspoon brown sugar
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper 
3/4 cup Kansas City-style barbecue sauce 
For garnish (optional): French fried onions, diced green onions

Prepare the Idahoan Mashed Potato Cups following package instructions.
Prepare the meatballs: In a large bowl, add pork, breadcrumbs, cheese, mustard, brown sugar and spices. 
Combine well, then form into meatballs no larger than 1-inch on any side. 
Add 2 teaspoons olive oil to a non-stick skillet, and heat on medium-high heat.
Add the meatballs, and sear for 3-4 minutes per side. Once seared to golden brown on two sides, roll the meatballs on their edges to sear the remaining surface area until they reach an internal temperature of 145 degrees Fahrenheit using an instant read thermometer.
Remove the cooked meatballs to a medium bowl or casserole dish and top with 3/4 cup barbecue sauce of your choice. Toss gently to coat the meatballs with the sauce.
Top the Idahoan Four Cheese Mashed Potato Cups with the sauced meatballs and optional garnish. Enjoy!
