It was my honor to conduct a charcuterie class at @childrensmercypark for the winners of an auction package that benefitted @victoryprojectkc! 

We laughed, we made salami roses 🌹, and enjoyed a picnic on the pitch with @sportingkc players. What a neat idea and a joy to be involved!

Leaving college, I knew Kansas City was where I needed to be (I could just feel it)! This city has the biggest heart and the warmest people. I'm so blessed to be a part of this wonderful place for the past 15 years.

I've got a whole lot of *new* on the blog, but this Shrimp Rasta Pasta is worth a highlight! Think jerk shrimp with a creamy, spicy pepper sauce. And pasta, of course. 😉

Today, I spoke with a group of ladies that have a longstanding book club about my cookbook publishing experience. I was surprised that they had each brought one of my recipes to eat and share, including cocktails! It was such a special experience for me, I got a little teary. 😪

Grateful to spend my afternoon with such thoughtful and supportive  women. ❤️

Believe it or not, one of the questions I get the most is, "What can I do with all of this ground beef I have?" 🍔🍝

I developed this recipe in answer to that question. This Bulgolgi Burger with Quick Pickled Cabbage and spicy Gochujang Mayo is inspired by Korean BBQ and is (IMO) a major upgrade from the traditional burger!

When life feels overwhelming, keep it simple with fresh produce at @Sprouts! 🥑🥑🥑

Sprouts is my go-to store for produce like the creamy avocados (they're *just* right), ripe mangos and juicy limes I used in this recipe. 

This Spicy Honey Chicken with Tropical Avocado Relish is delish by itself, or over rice. It's fresh, easy to make and ready in less than 20 minutes! 

Ingredients: 
12 ounces fresh chicken breast, sliced thin 

For the spicy honey sauce: 
3 tablespoons sriracha 
juice of 1 lime 
1 tablespoon honey 
a pinch of garlic powder 

For Tropical Avocado Relish: 
1 cup avocado, diced 
1 cup mango, diced 
2 tablespoons fresh cilantro, minced
2 tablespoons red onion, diced 
juice of 1 lime 
salt and pepper to taste

Instructions: 

Prepare a grill or grill pan to medium-high heat. 

In a small bowl, add sriracha, lime juice, honey and garlic powder. Whisk to combine, set aside. 

Pat chicken breast dry with a paper towel and place on oiled grill grates over high heat for 3-4 minutes each side. Before turning, baste with the spicy glaze. When the breasts reach 160F, remove and allow to rest for about 5 minutes. 

Meanwhile, combine avocado, mango, lime juice, onion, cilantro and salt and pepper in a medium sized bowl. 

Stir well and place in the refrigerator until ready to serve. Serve chicken breasts topped with avocado relish, drizzle any remaining glaze over the top.
